I wanted a GS500 for my first street bike. This article is what convinced me. I've summarized the good stuff below:
Powerful Engine That's Easy to Control
The GS500 makes a great beginner bike because the power is exciting, yet not over the top. The bike won't fly out from underneath you like a sport bike ("crotch rocket") might.
As you get more skilled, the bike will still out-accelerate most cars on the road, and is capable of reaching speeds well over any posted speed limit (100+ MPH.) The best part is that it will cruise comfortably down the highway at 55-80 MPH in 5th or 6th gear.

Low Seat Height
This bike has a relatively low seat height for a street bike, making it easy to straddle with both your feet firmly on solid ground. Anyone 5' 8" or taller should be able to plant both feet firmly on the ground.
No Fairings
While some people like the look of fairings, they usually aren't a good idea on a beginner bike. Why? They break easily and are expensive to replace! I love the look of this "naked" GS500, so I don't miss the fairings.
Excellent Gas Mileage
This bike has given me 63-67 MPG when cruising on the highway, 60-63 MPG on average, and 53-57 MPG when ridden aggressively.
Good Range
Couple the gas mileage with a large gas tank, and you can travel 220-250 miles before stopping to fill up the tank. (Although I prefer to refill at 200 just to be safe.)
Cheap to Insure
I can't speak for you, but it only cost me $109 per year for motorcycle insurance for this.
